The rest of the ingredients (e. grains and spices) we bought from Amazon or from our local grocery store. We set up an assembly line in our living room, threw on Netflix, and spent a few hours each week packing each meal into individual, vacuum-sealed bags, which we labeled (we invested in a FoodSaver, also a good choice). It was a lot of work to organize and execute, but it was totally worth it. Our dinners on the trail were so satisfying and tasty, and (sadly) so much more nutritious than what other hikers were eating. Since everyone's food preferences are different (especially once you're in hiker mode), we'd recommend playing around with a sampler kit of dehydrated foods and trying to recreate some of your favorite at-home dinners with dehydrated food. These were the ones we came up with: Indian Curry w/Couscous, Pad Thai, Lentil Stew, Split Pea Soup with Polenta, Pasta with Red Sauce & White Beans, "Chicken" Taco/Casserole, Mexican Chili, Thai Peanut dish and Cashew Butter Broccoli Mac.
